Can anyone help me "translate" this Aussie recipe?

I want to make this but I don't know what thickened/thin cream, gelatin leaves, or caster sugar are in 'Merican. Help converting measurements would also be appreciated :)

300ml thickened cream 300ml thin cream 50ml honey 3 gelatine leaves* 1/4 cup (60ml) whisky or Drambuie* 350g caster sugar 1 cinnamon stick 1/4 cup (60ml) whisky or Drambuie* 4 oranges, peeled, flesh sliced into 5mm-thick rounds
