Ingredients:
- 8 ounces manicotti
- 16 ounces ricotta cheese
- 1 1/2 cups parmesan cheese
- 2 large eggs
- 1/3 cup fresh parsley, chopped
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 4 ounces mozzarella cheese
- 24 ounces pasta sauce
Directions:
- Cook manicotti noodles in salty boiling water for 5-7 minutes. Noodles should still be slightly hard. Drain manicotti and run under cold water.
- Preheat oven to 375°F.
- In a medium bowl, mix together ricotta cheese, parmesan cheese, eggs, parsley, salt and pepper.
- Stuff each manicotti with cheese mixture. Tip: try using the back of a small spoon.
- Pour about 1/4 of the pasta sauce into a baking dish.
- Place stuffed manicotti in dish over the sauce.
- Pour the remaining sauce over manicotti.
- Sprinkle with mozzarella cheese.
- Bake in oven for about 30 minutes. Bon appétit!
