Easy Cheesy Manicotti

Ingredients:

  • 8 ounces manicotti
  • 16 ounces ricotta cheese
  • 1 1/2 cups parmesan cheese
  • 2 large eggs
  • 1/3 cup fresh parsley, chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 ounces mozzarella cheese
  • 24 ounces pasta sauce

Directions:

  1. Cook manicotti noodles in salty boiling water for 5-7 minutes. Noodles should still be slightly hard. Drain manicotti and run under cold water.
  2. Preheat oven to 375°F.
  3. In a medium bowl, mix together ricotta cheese, parmesan cheese, eggs, parsley, salt and pepper.
  4. Stuff each manicotti with cheese mixture. Tip: try using the back of a small spoon.
  5. Pour about 1/4 of the pasta sauce into a baking dish.
  6. Place stuffed manicotti in dish over the sauce.
  7. Pour the remaining sauce over manicotti.
  8. Sprinkle with mozzarella cheese.
  9. Bake in oven for about 30 minutes. Bon appétit!
