Paleo Ground Beef Recipes - Plantain Beef Pie

Ingredients

1 cup diced red pepper 1 pound (500 grams) grass-fed ground beef 1 bay leaf ½ an onion, diced 41 cup (240 mL) fire-roasted diced tomatoes 4 ounce (120 mL) can diced mild green chilies 2 Tablespoons dried currants (or raisins) ¼ cup (120 mL) tomato sauce 1 Tablespoon apple cider vinegar ½ teaspoon black pepper 2 Tablespoons chopped olives (green or black) ½ teaspoon sea salt 4–5 large, slightly ripe plantains (somesome, some dark spots) ½ teaspoon paprika or achiote 3 eggs 1 Tablespoon water Coconut oil for frying Chopped cilantro for garnish, optional 

Instructions

First let the oven to preheat to 350°F (175°C). Take an 8" x 8" baking dish and grease its inside using coconut oil.

Took a large skillet and heat it over medium-high heat. Completely brown the ground beef. Reduce the heat and as that of skillet, add the bay leaf, onion and red pepper. Soften the veggies by cooking it for 4-5 minutes.

Add the diced tomatoes, green chilies, currants, tomato sauce, apple cider vinegar, olives, pepper, salt and paprika. Stir and combine then let it simmer for 10 minutes. Till the cooking completes, start the plantains. (Before assembling the pie remove the bay leaf)

Peel, slice the plantains intodiagonal pieces of ?" size. Cut off both ends to peel and slice lengthwise through the skin, then finally peel off in sections. Use a knife to peel off the remaining skin.

In another skillet (one of cast iron is preferred) over medium heat, add coconut oil of a couple tablespoons and brown the plantains in alayer, each side about 2 minutes. Continue it until one see plantains are golden brown.

Take a small bowl and whisk the water and eggs

Now before assembling the pie. In the dish’s bottom area, spread half the veggie/ meat mixture. On the top pour about ? of the beaten egg. Place plantains above the top of egg in a single layer. Repeat the layers and top using the rest ? of the beaten egg.

Bake till the time the eggs are set or for about 45 minutes. After 10 minutes, slice into the pie.
