Nabeyaki udon is an easy, delicious, and healthy one pot meal full of different ingredients with noodles, meat, and vegetables. The clay pot keeps everything boiling hot while you eat, so it's great on a cold winter day!

Ingredients:
- 1 pack udon
- 120g chicken thigh
- 100g napa cabbage
- 1-2 shiitake mushroom
- 50g shimeji mushroom
- 50g enoki mushroom
- 50g shungiku
- 2 slices kamaboko
- 2 slices narutomaki
- 3 slices long green onion (negi)
- 3 slices carrot
Soup & seasoning:
- 3 cups dashi stock
- 1 tbsp soy sauce
- 1.5 tbsp mirin
- 1 pinch salt
Steps:
- Put udon noodles in donabe (clay pot).
- Top with ingredients (cut bite sized).
- Pour on the soup and seasoning.
- Bring to a boil and cook for about 8 minutes (until the chicken is cooked through)
If you don't have a clay pot, you can use a regular pot. You can put whatever you like in the pot (shrimp, salmon, cod, egg, tofu) to adjust it to your taste/dietary needs. Sprinkle on shichimi togarashi (seven flavor chili powder) if you want it a little spicy. Try topping the pot with cheese at the end for a little twist.
