BANH XEO (VIETNAMESE PANCAKE)

Ingredients

  • 400 grams of rice flour (you can replace with prepared flour for Banh Xeo which is sold in supermarket).
  • 300 ml of coconut milk.

  • 150 grams of tempura flour.

  • 1 teaspoon of turmeric powder.

  • 200 grams of pork (sliced into thin and small pieces).

  • 200 grams of shrimp (trim the top of heat, legs and the end of tail).

  • Fresh vegetables: green lettuce, mint leaves, basil and other herb.

  • Lemon, chilli.

  • Minced shallots, minced garlic.

  • Vegetable oil, salt, fish sauce, sugar.

  • Thin rice paper (banh xeo style).

Directions

  • Step 1: Prepare Sour-Sweet fish sauce

Crust chilli. In a bowl, pour fish sauce, minced garlic and a little of water, add sugar and squeeze lemon. Adjust the sauce to your taste then add crust chilli, minced garlic and stir well.

  • Step 2: Prepare Flour

Dissolve 400 grams of rice flour, 150 grams of tempura flour, 1 teaspoon of turmeric powder, 2 teaspoons of salt in 700 ml of liter of water and 300 ml of coconut milk. After that, take it rest for 1 hour and use a strainer to remove the dregs.

  • Step 3: Prepare Filling

Add 200 grams of pork and 200 grams of shrimp in a bowl, season 1 teaspoon of salt and 1 teaspoon of pepper. Marinate in 10 minutes.

  • Step 4: Fry Banh Xeo

  • Step 5: Serve Banh Xeo
