Chicken Pad Thai

Ingredients:

  • 10 ounces Thai rice noodles
  • 3 tablespoons granulated sugar
  • 2 tablespoons sriracha
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1/4 cup vegetable oil
  • 4 cloves garlic, minced
  • 1 pound chicken, chopped
  • 2 eggs
  • 1 1/2 cups bean sprouts
  • 3 green onions
  • 1/4 cup crushed peanuts

Directions:

  1. In a large pot, bring water to boil. Remove from heat.
  2. Add rice noodles to water and soak for 10 minutes, stir noodles then drain- set aside to cool.
  3. In a small bowl, combine the granulated sugar, sriracha, fish sauce, and lime juice- set aside.
  4. In a large skillet, heat up vegetable oil on medium/high heat.
  5. Add garlic and sauté for 1 minute.
  6. Add chicken and cook for 5 minutes. Flip and cook an additional 5 minutes.
  7. Add egg noodles to skillet and combine ingredients.
  8. Drizzle over Thai sauce and combine.
  9. Make room for the eggs by moving the pad Thai to one side.
  10. Pour in the eggs and scramble until 3/4 cooked.
  11. Mix in the eggs and continue to cook.
  12. Add the bean sprouts green onions, and crushed peanuts, combine all ingredients.
  13. Serve with Sriracha or your favorite sauce and enjoy!
