Ingredients:
- 10 ounces Thai rice noodles
- 3 tablespoons granulated sugar
- 2 tablespoons sriracha
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1/4 cup vegetable oil
- 4 cloves garlic, minced
- 1 pound chicken, chopped
- 2 eggs
- 1 1/2 cups bean sprouts
- 3 green onions
- 1/4 cup crushed peanuts
Directions:
- In a large pot, bring water to boil. Remove from heat.
- Add rice noodles to water and soak for 10 minutes, stir noodles then drain- set aside to cool.
- In a small bowl, combine the granulated sugar, sriracha, fish sauce, and lime juice- set aside.
- In a large skillet, heat up vegetable oil on medium/high heat.
- Add garlic and sauté for 1 minute.
- Add chicken and cook for 5 minutes. Flip and cook an additional 5 minutes.
- Add egg noodles to skillet and combine ingredients.
- Drizzle over Thai sauce and combine.
- Make room for the eggs by moving the pad Thai to one side.
- Pour in the eggs and scramble until 3/4 cooked.
- Mix in the eggs and continue to cook.
- Add the bean sprouts green onions, and crushed peanuts, combine all ingredients.
- Serve with Sriracha or your favorite sauce and enjoy!
