Improvised Chili Recipe, How did I do? (x-post /r/slowcooking)

1.5 lbs great northern and pinto

3 onions

Can of beer

2.5 lbs chicken thighs

56 oz tomatoes

1 tsp+ 1 tbsp cumin

1/2 tsp cayenne

1 tbsp+ 3.5 tbsp garlic

1tsp+ 1 2/3 tbsp coriander

2 tsp paprika

1 tsp+ 2 2/3 tbsp garam masala

1.5 tbsp dried oregano

3 tbsp fish sauce

3 tbsp soy sauce

3 cinnamon sticks

1.5 tbsp+ 2 tsp red chili powder

1/4 cup lemon juice

1.5 tsp salt

Cover chicken in yogurt, 1 tbsp garlic, 1.5 tbsp red chili powder, 1 tsp coriander, 1 tsp cumin, 1 tsp garam masala, 1/4 cup lemon juice, and 1.5 tsp salt for 2-24 hours. Shout out to /u/ninthinning for his tikka masala marinade. Cut into one inch cubes and sear in oil and add to crockpot.

Pressure cook 1.5 lbs of great northern and pinto beans for 25 minutes in a pressure cooker on high pressure. Or buy canned. Once done, add to crock pot.

Add 1 can of beer, I used keystone because it's all we had after a party.

Heat 2 tbsp oil in a pan. Add 1 tbsp cumin and make sure it doesn't burn. Then add the onions and cook until translucent. Once done, add garlic, I used 3.5 tbsp of garlic, which is 21 cloves. Once the garlic is not pungent, add 1/2 tsp cayenne pepper, 1 tbsp coriander, 2 tsp paprika, 2 tbsp garam masala, and 1/4 tsp asafoetida, and be sure to not have them burn. Once cooked through, add 56 oz of diced tomatoes and reduce for 5 minutes. Once reduced, add to the crock pot. Lastly, add 3 tbsp fish sauce and 3 tbsp soy sauce. Cook on low for 10 hours.

Later on, I checked on the spice level and I added 3 sticks of cinnamon, 2 additional tsp of garam masala, 2 tsp coriander, 2 tsp red chili powder, and 1.5 tbsp dried oregano.

My housemate bought oranges and if I could go back, I would throw one in the crock pot, along with a potato or two, and maybe some yellow mustard.

Despite the insane amount of garlic I used, it turned out AMAZING. I think it was a bit too umami, undoubtedly from the fish sauce, so I would cut down on that and add more of a warm spice like cumin or garam masala. This is the first time I've really ever winged a recipe off the top of my head, and I would love to hear what you guys have to say about it!
