A spicy touch on a Southern American favorite, enjoy!
Ingredients:
- 8 1/2 ounces corn kernels
- 3 jalapeno peppers, minced
- 1/2 cup shredded cheddar cheese
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 1/2 cup butter, melted
- 1 large egg, beaten
- 1 cup buttermilk
- 1 teaspoon baking powder
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 cup cornmeal
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
Directions:
- Add vegetable oil to 9 inch cast iron skillet and place in oven. Preheat to 400°F to warm skillet.
- Mix cornmeal, flour, baking powder, baking soda and salt in a large bowl.
- In a separate bowl, combine egg, melted butter, brown sugar, honey and buttermilk.
- Add wet ingredients to dry ingredients. Stir to combine; batter should still have lumps.
- Add minced jalapenos, corn kernels and cheddar cheese. Stir.
- Carefully remove skillet from oven and add mixture to skillet.
- Cook in preheated oven for about 25 minutes.
- Let rest in skillet for 10 minutes before serving.
