Jalapeno Cornbread

A spicy touch on a Southern American favorite, enjoy!

Ingredients:

  • 8 1/2 ounces corn kernels
  • 3 jalapeno peppers, minced
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey
  • 1/2 cup butter, melted
  • 1 large egg, beaten
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup cornmeal
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt

Directions:

  1. Add vegetable oil to 9 inch cast iron skillet and place in oven. Preheat to 400°F to warm skillet.
  2. Mix cornmeal, flour, baking powder, baking soda and salt in a large bowl.
  3. In a separate bowl, combine egg, melted butter, brown sugar, honey and buttermilk.
  4. Add wet ingredients to dry ingredients. Stir to combine; batter should still have lumps.
  5. Add minced jalapenos, corn kernels and cheddar cheese. Stir.
  6. Carefully remove skillet from oven and add mixture to skillet.
  7. Cook in preheated oven for about 25 minutes.
  8. Let rest in skillet for 10 minutes before serving.
