Looking to Make High Protein Ice Cream...

Hello, I just bought the attachment to my KitchenAid and have been looking for recipes on youtube and such for Protein Homemade Ice Cream. There's a guy here in town that has made crazy good Ice cream that is less than 100 calories per half cup and is less than 5g of carbs and fats total. Also averaging about 10-15g of protein. This stuff is delicious too. So I'm assuming he uses a natural zero calorie sweetener. Then also uses Whey Protein Isolate for it being mostly protein, but it's pretty creamy and he doesn't have fat. Isn't that how you make creamy ice cream? Having it higher in fat? What would be the substitute for that? Any input would be great. Thank you!!!
