This is a great recipe that goes together beautifully with chicken or fish as a side.
Ingredients
- 1 large ripe mango.
- 3 cups salad leaves of your choice. I'm using mixed salad and spinach leaves.
- 1 teaspoon brown sugar.
- 2 tablespoons sweet chilli sauce.
- 1\4 cup olive oil.
- 2 tablespoons white vinegar. You can add less vinegar if you prefer.
Method
Slice the cheeks from your mango then score with your sharp knife into the flesh as shown in the picture also cut as much flesh from the pip and squeeze the juice from the pip into your dressing.
Mix sugar,oil.chilli sauce and vinegar into a bowl then whisk.
Pour the dressing over your mango and salad leaves just before your ready to serve.
