Poor Man's "Thai" Food

I've made this dish for years and never thought to share it anywhere. It's not really Thai, but it does have some Thai flavors in it. It is probably about $.45 a bowl, maybe less.

Ingredients:

  • 1 pack of chicken flavored ramen noodles
  • 1 egg
  • 1 1/2 tablespoons of sriracha sauce, more if desired
  • 1 teaspoon sugar
  • 1 teaspoon peanut butter
  • Salt to taste
  1. Boil the ramen noodles until cooked. Scramble 1 egg until just only slightly runny. While cooking, stir sugar and sriracha sauce together in bowl until well mixed.

  2. When finished cooking, fork out the noodles from the pot into the bowl and toss until well mixed with sriracha.

  3. Add peanut butter and turn until incorporated and noodles become consistently thick. Add a slight amount of water from the pot that the noodles were in until the regular consistency of ramen noodles is achieved.

  4. Add chicken boullion seasoning from ramen noodle pack. Salt to taste. Toss scrambled egg in noodles.

It definitely has a nice spicy peanut flavor similar to some Pad Thai and it's much better than plain chicken ramen while still remaining very, very cheap. If you want to get fancy, add some chopped peanuts to the mix. I recommend you cook the ramen no longer than required to break up the noodles. This recipes is terrible with overcooked noodles.
