She's currently living off of spaghetti, chips and salsa, and bland things like rice and quinoa. I'm going to visit her this weekend and am looking forward to cooking, but I want to cook things that will really taste good to her.
My parents and I love trying new types of cuisine and recipes ranging from easy to difficult. My mom tries to eat vegetarian for the most part, but she has no issue with eating chicken, beef, or pork. It's just not her main choice, as she probably has meat only once or twice a week. She totally loves fish, especially salmon.
I did a search for recipes with tomatoes and saw a ton of posts asking about how to make tomato sauce (definitely helpful) and a few different kinds of tomato soup (saved those!). I've also seen the Eggs in Purgatory recipe, which looks like a lot of fun, but she's not a big fan of runny eggs due to a traumatic experience as a child.
What are your absolute favorite recipes that showcase tomatoes? Or recipes that use tomatoes as an ingredient in general? And taking it a step further than that, what are your favorite recipes that use tomato sauce?
