[Question] What are your thoughts on substituting somen noodles for the typical udon (or various other types) of noodles?

I've done ramen once before and I loved it. Unfortunately i couldnt get my hands on actual alkaline based noodles and I ended up with somen or the freeze dried noodles from instant ramen. that time I ended up using instant ramen noodles which were fine (though i overcooked them).

I haphazardly decided to cook some more tonight and chances are I will only have somen noodles at my disposal. Unless I get really lucky at stop and shop (as if) how do you think those will turn out?
