I might post this on r/mealprepsunday too in the hopes that I can get some inspiration.
I suffer from oral allergy syndrome, which basically means I'm allergic to fresh fruit and veg with a couple of exceptions (and also all nuts I've tried so far). It's not life threatening but it's very uncomfortable, so I prefer to just avoid. I can eat them fine if they're cooked or processed, ie concentrated juice.
Exceptions to allergy: carrots, banana, cucumber, lettuce, lemon, lime, orange, olives
I don't like cooked apple, but eat most meat. Also don't like peanut butter or jelly/jam
The trouble is that when I try and find lunch recipes for inspiration, they all include fresh fruit and veg or something I don't like. It also needs to be something that doesn't take hours to prepare and can be taken to work - there is a fridge, a toaster and a microwave there. I'm also one of those people that get bored with food if I eat it more than a couple of times in a row, to the point where I'd rather skip the meal than eat it again.
So, does anyone have any recipe ideas that I could use? I appreciate that you've taken the time to read :)
