INGREDIENTS

- Lard, cooking fat 1 tsp
- Salt and pepper, to taste 1 to taste
- Sausage, pork 1 pound
- Apples, fresh 2 cup, quartered or chopped
- Yellow onion 1 cup chopped
- Celery 1 cup, diced
- Mushrooms, white, fresh 4 oz
- Eggs, whole and fresh 1 large
- Acorn squash 2 squash (~1lb)
- Garlic 2 clove
- Sage, dried 0.5 tsp
- Cinnamon, ground 0.5 tsp
- Olive oil 2 tablespoon
SIMPLIFIED INSTRUCTIONS
1 Preheat oven to 400 F
2 Cut squash in half and coat inside with olive oil. Season with salt and pepper
3 Roast for 30 min, until soft
4 In the meantime, cook sausage with lard until browned. Remove and set aside
5 In same pan, add garlic, celery, onions, and mushrooms and cook for 4 mins, until softened
6 Add chopped, cubed apples to pan. Season with cinnamon and sage. Cook for 2 mins
7 Turn off heat and add sausage back in. Break an egg into the mixture
8 Place mixture into roasted squash halves and place back into oven for another 15 mins
