For the biscuits:
- 2c flour
- ½ tsp baking soda 3.1tsp salt 4.8 Tbsp unsalted butter(chilled & cubed) 5.3/4c buttermilk (If you only have regular milk add 1Tbsp white vinegar and you got it)
(Of course if we don't feel up to making fresh biscuits we can buy a tube at the grocery store, but there's nothing like fresh biscuits from scratch.)
For the creamed turkey:
1.2 Tbsp unsalted butter 2.2 Tbsp flour 3.½ c chicken or turkey broth 4.1 ½ c half & half 5.½ tsp salt 6.¼ tsp pepper 7.2c cooked turkey chopped 8.Left over or fresh mashed potatoes
Start by pre-heating your oven to 425 F. Line a large baking sheet with parchment paper, and set aside. If the kids are helping in the kitchen, have them measure the flour, baking soda, and salt then add it to a bowl to whisk it together. Add the cubed butter and cut into the flour mixture with a pastry blender, or 2 forks if you don't have that apparatus, mix until the mixture is crumbly. Pour in the buttermilk and mix with a wooden spoon until it's all combined.
Now we want a well-floured surface we can put the dough and roll until it's about ½ inch thick. If a biscuit cutter isn't handy we can use the top of a glass its rim dipped in flour to cut out our biscuits. Place at least 1 inch apart on the prepared baking sheet and bake for 12 -15 minutes until the edges are golden brown. We usually get around 10 biscuits from this recipe. Now we let the biscuits cool until they are a room temperature.
Now, while the biscuits are cooling, we make the creamed turkey. In a large skillet melt the butter over medium heat. Once it's all melted whisk in the flour. Continue to whisk and cook for 1-2 minutes. Add the half & half, broth, salt, and pepper. Continue to cook whisking every minute for about 5 minutes. Add the turkey and stir. Heat another 3-4 minutes until all the turkey is heated throughout and the sauce has thickened up.
To serve cut the biscuits in half, so you have 2 circles, place on plate inside up, add a scoop of mashed potatoes, and ladle the turkey over biscuits and potatoes.
