[Request] Less dense and more tender Carrot Cake

I've only made carrot cake once before and the recipe I made yielded a very delicious, dense and moist cake with tons of nuts and pineapple and whatnot. I'm looking for a lighter (texture not calorie) cake that does not contain nuts and other extras. Does anyone have such a recipe? I plan to bake them in mini cupcake (tassie) pans.
