Made plenty of blueberry muffins to last the next few days for breakfast.
Ingredients:
- 1 1/2 cups granulated sugar
- 1/2 cup butter, softened
- 3 large eggs, beaten
- 1 1/2 cups milk
- 4 cups all-purpose flour
- 2 cups blueberries
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions:
- Preheat oven to 400°F.
- Spray mini muffin tin with cooking spray or line with paper muffin liners.
- Combine flour, baking powder, baking soda and salt in a large bowl.
- In a separate bowl, cream together butter and sugar.
- Add eggs, vanilla and milk. Beat until combined.
- Pour wet ingredients into dry ingredients and stir.
- Fold in blueberries to batter.
- Add about 1 tablespoon of batter to each mini muffin tin.
- Bake in preheated oven for about 15 minutes or until toothpick comes out clean.
- Cool in pan for 5 minutes before removing.
