Blueberry Muffins

Made plenty of blueberry muffins to last the next few days for breakfast.

Ingredients:

  • 1 1/2 cups granulated sugar
  • 1/2 cup butter, softened
  • 3 large eggs, beaten
  • 1 1/2 cups milk
  • 4 cups all-purpose flour
  • 2 cups blueberries
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions:

  1. Preheat oven to 400°F.
  2. Spray mini muffin tin with cooking spray or line with paper muffin liners.
  3. Combine flour, baking powder, baking soda and salt in a large bowl.
  4. In a separate bowl, cream together butter and sugar.
  5. Add eggs, vanilla and milk. Beat until combined.
  6. Pour wet ingredients into dry ingredients and stir.
  7. Fold in blueberries to batter.
  8. Add about 1 tablespoon of batter to each mini muffin tin.
  9. Bake in preheated oven for about 15 minutes or until toothpick comes out clean.
  10. Cool in pan for 5 minutes before removing.
