- Dry Ingredients:
- 2 C Flour
- 2 tsp Baking Powder

½ tsp Salt

Wet Ingredients:

¾ Sugar
-
2 Eggs
-
6 Tbsp Unsalted Butter
-
½ C Vegetable Oil
-
Other:
-
Sanding Sugar or Coarse Sugar
-
1 Jumbo Muffin Pan
-
1 C Blueberries
-
Note: If you use frozen blueberries, be sure to thaw and drain before adding them to the batter

Directions

Combine wet ingredients into medium size bowl

Combine dry ingredients into small size bowl
-
Add ½ of dry ingredients into wet ingredients and combine. Repeat with other ½ of dry ingredients. Batter will be thick like a cookie dough

Add blueberries, stir in with spatula
-
Scoop Blueberry batter into muffin pan. I used a 2” cookie scoop. * 2 Scoops per muffin.

Top each muffin with about a table spoon of sanding sugar.

Bake at 375° for 20-22 Minutes.

This recipe will make 6 to 7 jumbo muffins.
