Homemade Blueberry Muffins

  • Dry Ingredients:
  • 2 C Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt

  • Wet Ingredients:

  • ¾ Sugar

  • 2 Eggs

  • 6 Tbsp Unsalted Butter

  • ½ C Vegetable Oil

  • Other:

  • Sanding Sugar or Coarse Sugar

  • 1 Jumbo Muffin Pan

  • 1 C Blueberries

  • Note: If you use frozen blueberries, be sure to thaw and drain before adding them to the batter

  • Directions

  • Combine wet ingredients into medium size bowl

  • Combine dry ingredients into small size bowl

  • Add ½ of dry ingredients into wet ingredients and combine. Repeat with other ½ of dry ingredients. Batter will be thick like a cookie dough

  • Add blueberries, stir in with spatula

  • Scoop Blueberry batter into muffin pan. I used a 2” cookie scoop. * 2 Scoops per muffin.

  • Top each muffin with about a table spoon of sanding sugar.

  • Bake at 375° for 20-22 Minutes.

  • This recipe will make 6 to 7 jumbo muffins.
