Salmon kale vegetable bowl

Ingredients:

  • SALMON FILLETS
  • LARGE BAG OF KALE
  • 1 ORANGE – ZEST AND ALL
  • 1 CAULIFLOWER
  • 2 CUPS OF WHOLEWHEAT PASTA
  • 1 TBSP MADRAS CURRY POWDER
  • SALT AND PEPPER

So this one may look a little strange (what with the orange and the curry powder) but I assure you it tastes scrumptious. It’s not very complicated/time consuming, as you only need end up just mixing everything together. I’ve been playing with numerous salmon recipes for quite a while, as we may or may not have bought an entire salmon…See it was on sale and who could pass it down? Needless to say my freezer is still full of little boxes of salmon. I’m trying to cut down the stock actually (I had TWELVE boxes!!!) Not only was it a money-saver but it’s forcing me to think of different ways to use salmon and what kind of flavours can be used to go with it. This one is a little more adventurous and random, but I’m really pleased with how it turned out!

I thought I’d add in how the salmon looked before we cut it – it reminded me of the time I lived in Spain and my mum accidentally bought a chicken, with the head/guts and all. This was slightly easier to witness I won’t lie. Firstly, to get it out of the way – and because it takes a while in the oven – is the salmon. What you want to do it place the fillets on a baking tray and cover with salt and orange zest. Not too much salt but go crazy with the zest. Then drizzle some olive oil on top and place in the oven (at about 200 degrees centigrade I’d say) until fully cooked through.

Wash your cauliflower thoroughly to get all the dirt our and chop into pieces. Boil with a pinch of salt until they’re nice and soft. Not too soft though – I personally despise soggy vegetables so I like to leave them with a good crunch in them! While the cauliflower is cooking cut your orange into very small pieces – take care not to lose all the juice! Wait till the salmon is ready before moving onto the next part as you’ll need it fully cooked for the next stage.

Start boiling the pasta in a small pan – wholewheat pasta takes a little while so this would be a good time to start preparing it.

Heat some olive oil gently in a frying pan and throw the rest of the ingredients in. It’s quite simple when it comes down to it! Start with the cauliflower and kale, then add the orange chunks and the salmon, stirring frequently. Add the curry powder, pepper and salt into the mix until everything is sizzling and beautiful.
