Tex-Mex cuisine only came to Australia relatively recently, and outside of the capital areas and tourist centres decent food can be impossible to find. I recently had a Guzman y Gomez spicy chicken burrito, and to say it changed my perspective of fast food is a huge understatement. I've been stuffing these delicious things into my face as fast as I can, but at $11 a go (and a decent drive to get there) I'm going to need a second job at this rate.
I'd love to be able to make them at home, and I've googled recipes but there are a thousand variations and very little indication of how good the chicken is. Instead of running the gauntlet of shitty recipes and hoping for the best, I'm after experienced tex-mex fans to share their spicy chicken recipes. I'm good for tortillas, rice, beans, salsa.... but the chicken eludes me. I like it HOT, full of flavour, and with that little bit of char I know only cast iron can give.
Please help! Surely someone can share their recipe or point me in the direction of a good US/Mex based website with recipes?
