Hello all, I have been Sous Vide-ing like a fiend since I got two Anovas a few months back. I am doing a rather large dinner party tomorrow for a few guests and I have parted out 7 whole baby rabbits, and I've dropped the contents into 2 separate large vacuum bags, along with 1.5lbs of Duck fat per bag, and a considerable amount of rosemary. I'm wondering what would be the best sort of sauce to whip up for them as a nice wintery flavor. I am also making fried potato balls to go along with it and I'm not sure what the vegetable will be yet, thought I might let the sauce inform that decision. I have about 11 gallons of Rabbit stock I can use some to flavor the sauce as well but I thought, who better to get a sauce recommendation from than the best foodies. Thanks in advance everyone!
