Bacon Wrapped Cream Cheese Stuffed Chicken

Full post and picture

Ingredients:

  • Twelve slices bacon (3 pieces per chicken breast)
  • Eight oz cream cheese softened
  • One tbsp chives chopped
  • Two lb chicken breasts boneless and skinless

Instructions:

– The first thing you need to do is to Preheat the oven to 375F.

– After that In a large frying pan (I’m using this non stick frying pan) on medium heat, cook the bacon until its red. Place the bacon on a paper towel while preparing other ingredients so it could dry the fat.

– In a small bowl, mix together chives and the cream cheese and set them aside.

– Place the chicken breasts in a plastic bag and using a meat mallet, flatten chicken breasts until they’re about 1/4 inch thick (Video).

– Take a portion of a spoon wiht cream cheese mix and lay it in the center of the chicken breast, keeping at least a half inch gap from the edges clear.

– Than starting with the smallest end start rolling the chicken breast. After that, with the seam side of the chicken facing up, start wrapping the pieces of bacon around it, at the end the bacon should be tucked with he chicken. \

– Finally Place the chicken in a baking dish (I used a 9×13 I had handy) and bake the bacon wrapped chicken for 30 minutes. Next turn oven to broil for 5 minutes to crisp the bacon if you want it.
