Someone asked for my breakfast sausage recipe elsewhere. I just use ground pork that I buy from the grocery store. Clearly you could make your own, but I do not.
Breakfast Sausage
Preparation Time: 10 minutes
Ingredients
- 1 T salt
- 1 Lb Ground Pork
- 1/4 t ground white pepper
- 1/2 t rubbed sage
- Scant ginger
- 1/4 t nutmeg
- 1/2 t ground hot red pepper
- 1 1/2 t Sugar / Honey / Maple Syrup / Brown Sugar (Optional)
Instructions
Mix dry ingredients together. Sugar is optional, and you can use as little or as much as you find appropriate. I like 1 Tbsp light brown sugar.
You can mix however you like, but don't be too rough with the meat. I gently flatten a bit, put the dry ingredients on top, then halve, place on top and flatten again. I do this 3 or 4 times until it looks like the dry ingredients have been mixed well.
Cook a small amount and taste to verify the flavor.
Can be used immediately. I put it in a container in the fridge overnight to let the spices incorporate with the meat.
Form into patties or loose, it's up to you. If you're really brave, you can buy casings and the equipment to make your own links.
Notes
This can make 8 ~1.5" patties. I cook them all at once and keep them in the fridge/freezer and take out as needed.
Don't be smart and put garlic in this. Unless you really want to.
