Hi all. I posted a request similar to this a while ago, but could not find the right results.
I am looking for a recipe my grandmother used to make that she called "Christmas Cake." It was a plain, white pan cookie. It was not like shortbread at all, but was very slightly sweet (not buttery), airy and almost spongy, kind of like a cross between a cookie and cake. It was cut into squares and dusted with powdered sugar.
Her family had English origins, and my grandfather's family had Swedish origins, so I'm not sure if the recipe could have come from one of those places or is an American recipe. Any help would be much appreciated! I have been looking for the recipe for years to no avail.
