Shortbread cookies are easy to make and delicious. One of my favorite holiday treats.
Ingredients

8 oz. sugar

16 oz. unsalted butter, at room temperature

32 oz. (3 1/2) cups all-purpose flour

1 tsp. vanilla extract

1/4 teaspoon salt
Beat together butter and sugar with an electric mixer until they are well combined. Add the vanilla and mix or stir that in.
Sift together the flour and salt and combine, using a wooden spoon. When the dough is just formed and comes away from the sides of the bowl, dump onto a floured surface and shape into a thick disk. Refrigerate this for at least 30 minutes.
Meanwhile, preheat the oven to 350F.
Roll out the disk of dough with a rolling pin until it's about 1/4 to 1/2 inch thick. Use a cookie cutter to cut the individual cookies and place them on a baking sheet lined with parchment paper or a Silpat.
Bake 15-20 minutes (or until the edges of the cookies just start to brown).
When the cookies are done, let them cool on the baking sheet for five minutes and then carefully transfer to a rack to finish cooling.
