10-Ingredient Chicken Piccata

This 10-ingredient chicken piccata recipe is very simple and quite delicious, you can enjoy it a la carte, with pasta, or even as a sandwich.

Ingredients:

  • 2 chicken breasts, butterflied
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 6 tablespoons unsalted butter
  • 5 tablespoons extra-virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers, rinsed
  • 1/3 cup fresh parsley, chopped

Directions:

  1. Begin by chopping the garlic, parsley and slicing the lemon.
  2. Butterfly the chicken breasts and season with salt and black pepper.
  3. Dredge chicken into the flour, covering both sides evenly.
  4. In a large skillet, on medium heat, add the olive oil and 2 tablespoons of the butter.
  5. Once bubbly, add the chicken and cook for 3-5 minutes per side.
  6. Remove chicken and set aside.
  7. Add garlic, capers, chicken broth, lemon juice, salt, black pepper, and butter to skillet.
  8. Combine ingredients and stir until sizzling.
  9. Add chicken back to the skillet and sauté for 3 minutes per side.
  10. Enjoy on its own or serve over your favorite pasta, and drizzle over the sauce.
