This 10-ingredient chicken piccata recipe is very simple and quite delicious, you can enjoy it a la carte, with pasta, or even as a sandwich.
Ingredients:
- 2 chicken breasts, butterflied
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/4 cup capers, rinsed
- 1/3 cup fresh parsley, chopped
Directions:
- Begin by chopping the garlic, parsley and slicing the lemon.
- Butterfly the chicken breasts and season with salt and black pepper.
- Dredge chicken into the flour, covering both sides evenly.
- In a large skillet, on medium heat, add the olive oil and 2 tablespoons of the butter.
- Once bubbly, add the chicken and cook for 3-5 minutes per side.
- Remove chicken and set aside.
- Add garlic, capers, chicken broth, lemon juice, salt, black pepper, and butter to skillet.
- Combine ingredients and stir until sizzling.
- Add chicken back to the skillet and sauté for 3 minutes per side.
- Enjoy on its own or serve over your favorite pasta, and drizzle over the sauce.
