Ingredients
Burgers
- 1 lb. ground chicken (I like to grind up thigh meat in a meat grinder)
- 1 lb. ground chorizo
- burger buns
- sliced mozzarella cheese
- stone ground or whole grain mustard
- grilled onions
- tomato slices
- green leaf lettuce
- salt
- pepper
Patatas Bravas
- 6 yukon potatoes, quartered
- 1/2 cup oil for frying
- 1 tsp. smoked paprika
- 1/2 tsp cayenne
- salt and pepper
Patatas Bravas Sauce
- 6 garlic cloves
- 1/2 cup olive oil
- 3 tsp lemon/lime
- 1 tsp salt
- 1 tsp your favorite hot sauce
- 1 egg yolk
Cooking
- combine the ground chicken and the ground chorizo in a bowl with salt and pepper. slice tomato. prepare lettuce. cover the meat mix with plastic and let sit in fridge while making sauce and patatas.
- cut potatoes and wash until no more starch is visible in the water. set in a bowl with water in fridge until done making sauce.
- to make the sauce, in a mortar add in the garlic and salt and with pestle, mash into a past-like consistency. add the lime/lemon juice and mix a bit more. in a bowl pour this mixture in and start to whisk with one hand, while slowly adding in the olive oil with the other hand and continuing to whisk. add in the egg yolk and continue to whisk until all the oil is combined and the sauce has a mayo-like consistency. add in the hot sauce and mix until completely combined with the sauce. set in fridge.
- grill onions in a very small amount of oil and a frying pan until browned.
- take the meat mix out of the fridge and make patties out of it. add the patties to a hot cast iron pan and grill on each side until done to your liking. assemble burgers and place patatas as side with the sauce. optional, garnish patatas with chopped cilantro.
Side Note You can use whatever you want to put on your burger, I just listed what I used.
