Cinnamon Roll Pancakes

Ingredients:

Pancake Batter:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups milk
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil

Cinnamon Filling:

  • 6 tablespoons butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 2/3 cup brown sugar
  • 1/4 teaspoon nutmeg
  • 2 tablespoons cinnamon

Glaze:

  • 4 tablespoons butter
  • 2 ounces cream cheese
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions:

Pancakes Batter:

  1. In a large bowl, combine the all-purpose flour, baking powder, 1 teaspoon salt, milk, eggs, and vegetable oil.
  2. Whisk ingredients until most of the lumps disappear, set aside. Try not to over mix batter.

Cinnamon Filling:

  1. In a small bowl, whisk together 6 tablespoons butter, 1 1/2 teaspoons vanilla extract, brown sugar, nutmeg, and cinnamon.
  2. Mixture should be thick and combined thoroughly.
  3. Scoop mixture into a plastic bag and cut off one corner.

Glaze:

  1. In a microwavable cup, add the cream cheese and 4 tablespoons butter together.
  2. Microwave for 45 seconds, or until ingredients are softened.
  3. Add the powdered sugar, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt.

Cooking:

  1. Preheat a griddle or skillet to 375°F.
  2. Measure 1/2 cup batter and pour on griddle.
  3. Wait 1 minute and begin to squeeze out cinnamon filling onto pancake.
  4. Cook for a total of 3-4 minutes and flip.
  5. Cook for an additional 3-4 minutes or until golden brown.
  6. Drizzle on glaze and enjoy your Cinnamon Roll Pancakes!
