Ingredients:
Pancake Batter:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 1/2 cups milk
- 2 eggs, beaten
- 2 tablespoons vegetable oil
Cinnamon Filling:
- 6 tablespoons butter, softened
- 1 1/2 teaspoons vanilla extract
- 2/3 cup brown sugar
- 1/4 teaspoon nutmeg
- 2 tablespoons cinnamon
Glaze:
- 4 tablespoons butter
- 2 ounces cream cheese
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
Pancakes Batter:
- In a large bowl, combine the all-purpose flour, baking powder, 1 teaspoon salt, milk, eggs, and vegetable oil.
- Whisk ingredients until most of the lumps disappear, set aside. Try not to over mix batter.
Cinnamon Filling:
- In a small bowl, whisk together 6 tablespoons butter, 1 1/2 teaspoons vanilla extract, brown sugar, nutmeg, and cinnamon.
- Mixture should be thick and combined thoroughly.
- Scoop mixture into a plastic bag and cut off one corner.
Glaze:
- In a microwavable cup, add the cream cheese and 4 tablespoons butter together.
- Microwave for 45 seconds, or until ingredients are softened.
- Add the powdered sugar, 1/2 teaspoon vanilla extract, and 1/4 teaspoon salt.
Cooking:
- Preheat a griddle or skillet to 375°F.
- Measure 1/2 cup batter and pour on griddle.
- Wait 1 minute and begin to squeeze out cinnamon filling onto pancake.
- Cook for a total of 3-4 minutes and flip.
- Cook for an additional 3-4 minutes or until golden brown.
- Drizzle on glaze and enjoy your Cinnamon Roll Pancakes!
