Help me to recover a recipe, and I highly recommend that you try should we rediscover it!

This restaurant had closed down years ago after the owner had tragically passed, and thus leaving us no longer with an opportunity to plead for the recipe. It's a vegie burger recipe, and as an avid carnivore it is one of the greatest things I've eaten.

Allow me to try and describe. I've struggled to find a comparable recipe online. This is what I observed. This is a thick and tasty burger, unlike a typical flat, bland vegie burger. I believe the burger is primarily shredded spinach and garbanzo bean. There is shredded carrot. There must be more to it as the burger is very tasty even before the condiments. Something bound it together wonderfully, and it had a fantastic hearty texture. Not unlike meat, yet not meat-like if that makes much sense. I believe the thick patty was grilled gently. The condiments were house made mayonnaise and pickled red onion between a local bakery's baguette roll.

I would love to find a recipe in order to recreate this. I'd imagine failing frustratingly should I attempt to recreate it by nostalgia. Thank you!
