Looking for a good fried rice and a good red curry recipe.

I'd like a versatile fried rice recipe that I can make veggie or with meat in it, and also a good red curry recipe. I was thinking a Japanese curry. Basically, if I were to visit a family in Japan on curry night, what would I get? I had a friend introduce me to it after a study abroad in Japan, and it melted my brain with tastiness.
