OK. It's not "real" chili, but great for a game day watch party

It's a far cry from "competition" chili, but this hearty stew of ground beef, tomatoes, beans and chilies is quick to assemble, economical and versatile enough for a tailgate or a Superbowl party at home.

Recipe

Ingredients

  • 2 slices smoked bacon, diced

  • 1 large yellow onion

  • 2-3 cloves garlic

  • 1 cup sweet bell pepper (or mild green chili such as Anaheim), diced

  • 1/2 medium jalapeno pepper, more or less to taste, or substitute your favorite hot pepper

  • 1 lb. ground chuck

  • 1 Tbsp. chili powder

  • 1-2 tsp. cumin, more or less to taste

  • 28 oz. canned diced tomatoes

  • 1 15 oz. can red kidney beans

  • Salt and pepper, to taste

  • Shredded cheddar cheese for garnish

Directions

Cook the bacon in a large pot (about 6 quart size) over modeately high heat until most of the fat has rendered and the bacon begins to crisp up.

Add the onion, garlic and peppers to the pot and cook, stirring frequently, until the onions are just tender.

Add the ground chuck and brown lightly, using a spoon to break up any over large pieces.

Season with chili powder, cumin, salt and pepper and stir in well. When the spices are fragrant, add the tomatoes and beans and reduce to a simmer.

Simmer for 30 minutes and serve hot, with a garnish of shredded cheddar cheese.

(Once the ground beef is browned, you can transfer to a slow cooker and finish the recipe in that, which is perfect for a party or tailgating.)
