[Request] Potato soup with ham bones?

I know the basic ingredients, but not the method. Do I put the sauteed mirepoix in with the bones, or wait till the potato stage? Do I remove all the meat I can from the bones and add it back later? Do I just simmer them with the meat on? Does it matter? Will the ham still taste like anything after being simmered in water/broth for a few hours? Halp?
