Hi all! This is my first post but I'm a long time lurker. I'm not a vegetarian but there was a wonderful Chinese grocery store down the street from my old apartment. They served "ramen" which was actually a vegetarian version of Taiwanese Beef Noodle Soup. They serve it was Shang Hai bok choy, tofu, veggie beef meatballs, and ramen noodles. The soup had fresh ginger, lemon grass, jalapeños, and a spicy chili sauce added and simmered for a couple minutes. The only thing I don't know is what their base broth was made of.
Now I searched the internet for beef noodle soup recipes and I didn't find any decent ones for a veggie version. I wouldn't mind doing it with beef but its more expensive and I'd think more fatty. I can handle the preparation but I have no clue what they included in the base of their broth they kept on reserve. I'm new to vegetarian cooking and I was wondering if anyone had suggestions of a decent starting point. All my past vegetarian dishes have lacked a lot in flavor and I don't want to repeat my mistakes.
