Roasted Cornish Hens

Tackled the turkey on Thanksgiving, so wanted to try out some Cornish Hens, turned out great!

Ingredients:

  • 1 tablespoon lemon pepper
  • 1 teaspoon poultry seasoning
  • 1 tablespoon dried basil
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 1/2 medium onion, diced
  • 1/2 medium green bell pepper, diced
  • 2 stalks celery, diced
  • 2 tablespoons olive oil
  • 3 cornish hens
  • 6 sprigs fresh thyme

Directions:

  1. Preheat oven to 375°F
  2. Rub: Combine lemon pepper, poultry seasoning, dried basil, salt, and black pepper in a small bowl.
  3. Chop onion, green pepper, and celery into small cubes.
  4. Combine all veggies in a bowl and mix together.
  5. Pour olive oil over each hen.
  6. Take the rub and spread over both sides of each hen.
  7. Stuff veggies into the cavity of each hen.
  8. Add olive oil to skillet and place hens in skillet.
  9. Top with fresh rosemary and bake for 1 hour- enjoy!
