Tackled the turkey on Thanksgiving, so wanted to try out some Cornish Hens, turned out great!
Ingredients:
- 1 tablespoon lemon pepper
- 1 teaspoon poultry seasoning
- 1 tablespoon dried basil
- 2 teaspoons salt
- 2 teaspoons black pepper
- 1/2 medium onion, diced
- 1/2 medium green bell pepper, diced
- 2 stalks celery, diced
- 2 tablespoons olive oil
- 3 cornish hens
- 6 sprigs fresh thyme
Directions:
- Preheat oven to 375°F
- Rub: Combine lemon pepper, poultry seasoning, dried basil, salt, and black pepper in a small bowl.
- Chop onion, green pepper, and celery into small cubes.
- Combine all veggies in a bowl and mix together.
- Pour olive oil over each hen.
- Take the rub and spread over both sides of each hen.
- Stuff veggies into the cavity of each hen.
- Add olive oil to skillet and place hens in skillet.
- Top with fresh rosemary and bake for 1 hour- enjoy!
