A delicious and classic take on Shrimp Fried Rice, easy to make too, picture below.
Ingredients:
- 2 teaspoons cornstarch
- 1 pound shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 teaspoons minced ginger
- 3 large eggs, beaten
- 3 cups cooked white rice
- 1 cup carrots, chopped
- 4 ounces snow peas
- 2 tablespoons soy sauce
- 3 teaspoons sesame oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup scallions, chopped
Directions:
- Place the shrimp in a small bowl and toss together in the cornstarch.
- In a large skillet, on medium heat, add vegetable oil.
- Once heated, add the garlic and ginger- Sauté for 1 minute.
- Add the beaten eggs and cooked rice.
- Fold in eggs and rice and cook for 3 minutes.
- Add carrots, snow peas, soy sauce, sesame oil, salt, and black pepper.
- Combine all ingredients and cook for 5 minutes.
- Move the rice to make a place for the shrimp in the center.
- Add shrimp and sauté for 5-7 minutes or until shrimp turn pink.
- Add the scallions and continue to stir for 3 minutes.
- Garnish with scallions and enjoy!
