Spelt wheat with parsley and mushrooms. It also includes wine – need I say more? You really can’t get more traditionally nordic here! This is the first time I’ve actually tried cooking with spelt, and me oh my it will certainly not be the last. It’s almost nutty, so filling and just delicious in every way. I much prefer it to bulgur wheat, which I use quite a bit. It may seem a bit long winded but it’s definitely worth it. If your liquid to spelt ratio seems wrong don’t worry, you’re still on the right track. It’s almost a risotto, just much healthier!
INGREDIENTS
- 3 dl. SPELT WHEAT
- 4 dl. WATER
- 4 dl. WHITE WINE
- 2 FINELY CUT ONIONS
- 2 CRUSHED GARLIC CLOVES
- 1 BUNCH OF PARSLEY
- 60G BUTTER (YOU DON’T HAVE TO USE BUTTER IF YOU DON’T WANT TO)
- 70G PARMESAN
- 500G MIXED MUSHROOMS
- LIME
- OLIVE OIL
- SALT AND PEPPER
So first of all cut up the onions really really finely, then fry them with the crushed garlic and spelt in a pot. Not for too long, just until the onions go a little brown and soft.
Then add the water and white wine. Let this simmer for around 2o minutes – it smells divine. I literally couldn’t tear myself away from the stove – it smelt that good. Maybe it’s the fact that I just love wine. There was a little left over in the bottle so we had a cheeky glass.
Chop up all those lovely mushrooms. Now take the butter (if you’re not keen on using butter just use some olive oil/oil of your choice, coconut oil would taste great here I think) and heat it up in a frying pan. When it’s completely melted and almost going brown add in the mushrooms and a little salt. Cut half of the parsley and add to the mix. ONLY half here.
Take the rest of the butter and add it to the spelt pot together with the parmesan and stir under a low heat. Season with salt, pepper and half the lime. Add the rest of the parsley!
Serve the spelt – don’t forget to pour the delicious wine mixture over it – and place the mushrooms on top. I also squeezed some lime over this as it makes the flavours really pop!
That’s pretty much it! This served 2 people no problem as spelt is quite filling. Happy spelt cooking!
