Summer berry sundae

INGREDIENTS  

1/4 cup(55g) caster sugar  

500 gmixed fresh or frozen berries  

1 tbsporange liqueur or orange juice  

1 Lvanilla ice-cream  

2/3 cup(100g) macadamias, chopped, toasted  

PREPARATION  

1.Combine sugar and berries in a medium pan and stir over low heat, without boiling, until sugar is dissolved.  

2.Bring to the boil and simmer uncovered about 5 minutes or until berries are soft. Stir in liqueur or juice and cool, if desired.  

3.To serve, layer scoops of the ice-cream, berry mixture and nuts in 4 tall serving glasses.  

Tips

Toasting nuts enhances their flavour, texture and aroma. Place the macadamias on an oven tray and bake uncovered at 180°C for 5-8 minutes or until browned lightly.
