American Psycho Recipes? I'm looking for a recipe for every dish mentioned in the movie.

Here's the best list I could come up with. My goal is to assemble an ingredients list, prep list, cooking instructions, and plating instructions (keeping the 1980's plating methods in mind).

The movie takes place during winter, so seasonality of ingredients may come into play here. Then again these fictional restaurants are costly to dine at, so extra charges for out of season ingredients (at least in the 1980's in a major city) may or may not be important.

I would love to get these together and create a comprehensive album with step by step instructions, tip and tricks, and of course, tons of photos.

Cinnamon Sugar Snow

Hey everyone, I'm working on my capstone project for my culinary school and I'm having issues with a concept. Currently working on my last course of 8: the dessert. My plan thus far is a Cinnamon Panna Cotta with a blood orange coulis and almond tuile. For the plating and garnish I'm looking for something that could be similar to a fluffy consistency of snow but to be stable at room temp and be made of cinnamon and sugar, plus whatever stabilizers I would need. Does anyone have any ideas?

You can watch a video on the link Awesome croquettes! The Spain's famous tapa becomes fancy with this one. Croquettes always take time to prepare, but always worth it.

INGREDIENTS 200g Flour for the dough 1 Chicken breast 4 bella mushrooms Parsley Salt Pepper 1 Chicken Bouillon Milk White wine Olive oil Flour to bread them Beaten egg Bread crumbs

STEP BY STEP 1. Cut the chicken in tiny pieces and add salt, pepper and parsley. 2. Cut the mushrooms in little pieces too. 3. Fry the chicken and mushrooms in olive oil. 4. After a couple of minutes add the white wine. Cook well. 5. Add the flour and mix well. 6. Add the milk little by little and stir non-stop. 7. Keep stiring until the dough gets thick and doesn't stick to the pan. 8. Put the dough in a bowl and let it cool for 2 hours. 9. Bread the croquettes. Take some dough, put it in flour, then in the beaten egg and then in the bread crumbs. 10. Fry them.

Done! They are pretty awesome aren't they? You can use them for any occasion.

ESPAÑOL

¡Croquetas de la hostia! La famosa tapa española se vuelve finolis en esta receta. Las croquetas siempre lleva tiempo hacerlas, pero siempre merecen la pena.

INGREDIENTES 200g de harina para la masa 1 pechuga de pollo 4 champiñones frescos Perejil Sal Pimienta 1 pastilla de avecren Leche Vino Blanco Aceite de Oliva Harina para envolverlas Huevo batido Pan rallao

PASO A PASO 1. Trocea el pollo en trozos muuuuy pequeños y échale sal, pimienta y perejil. 2. Trocea bien los champiñones. 3. Fríe los champis y el pollo con algo de aceite de oliva. 4. Después de un par de minutos añade vino blanco. Cocínalo bien. 5. Añade la harina y mezcla bien. 6. Añade a poquitos la leche y vete revolviendo sin parar en ningún momento. 7. Sigue revolviendo hasta que la masa quede espesita y no se pegue nada a la sartén. 8. Pon la masa en una fuente y déjala enfríar un par de horas. 9. Empana las croquetas. Coge un poco de masa, ponla en harina, luego en el huevo y luego el pan rallao. 10 Fríelas bien.

Carbonade Flamande (Belgian Beef Stew)

Carbonade flamande is beef braised in dark ale that has a sweet and sour kind of flavor and just a hint of the yeasty bitterness of the ale.

Ingredients

  • 2 lbs. beef chuck, cut into 1-inch cubes

  • 3 cups (about two 12-oz bottles)Belgian brown ale

  • Neutral flavored cooking oil

  • Unsalted butter

  • 2 slices bacon, diced

  • 2 medium onions, diced

  • 2-3 bay leaves

  • 4 whole cloves

  • 1-2 twigs fresh thyme

  • 1 tsp. black peppercorns

  • Several slices of mild dark brown bread (eg., not pumpernickel)

  • Dijon mustard

  • 1 cup beef stock or 1 cube beef bouillon (I use 1 Tbsp. Better Than Bouillon Beef Base or beef demiglace if I have that)

  • Sea salt, to taste.

Preparation

Tie up the thyme, cloves, bay leaves and peppercorns into a bit of cheesecloth.

In a dutch oven or deep saute pan, heat up 1 Tbsp. butter and 1 Tbsp. oil and brown the beef pieces well on all sides over medium high heat. Work in batches to avoid overcrowding. Remove and set aside.

Brown the bacon in the dutch oven, then add the onions and cook until they're soft.

Add the beef back to the pot along with the beer, beef stock, and the spices tied up in cheesecloth. Bring to a boil, stir with a wooden spoon, scraping up any brown film in the pan, then reduce heat to a slow simmer.

Cover the stew with a single layer of the bread slices after "buttering" the down-facing side with Dijon mustard.

Simmer the stew for about an hour and then start testing the beef every 15 minutes or so, until it is fork tender and just barely holding together.

Remove the cheesecloth with the spices, dish into bowls with a parsley garnish and serve with a side of frites.

Looking for a similar thai recipe

There's a Thai place nearby that serves a dish using a very spicy, peppery, garlicky, dark, thin sauce served over steamed vegetables, thin sliced cabbage, and white rice.

I dream about this dish! and wish I could make it at home. while I probably cant recreate the exact taste of the sauce used, I was wondering if anyone had a recipe for something similar to that description. I'm challenged when it comes to getting accurate ingredient amounts.

Hunan Beef with Cumin Recipe (Zi Ran Niu Rou)

Cumin isn't a typical spice in Chinese cooking, but it is very popular in the western province of Xinjiang, and there are plenty of delicious recipes that use it. Hunan beef with cumin is an easy-to-make and wonderfully meaty dish that’s perfect if you’re entertaining carnivores - give it a try!

Ingredients

  • 250g trimmed beef steak

  • ½ red pepper

  • ½ green pepper

  • 4 tbsp cooking oil

  • 1½ tsp finely chopped ginger

  • 2 tsp finely chopped garlic

  • 1 fresh red chilli, deseed and finely chopped (optional)

  • 2 tsp ground cumin

  • 2-4 dried chilli flakes to taste

  • 2 spring onions, green parts only, finely diced

  • 1 tsp sesame oil

For the marinade

  • 1 tsp Shaoxing wine

  • ¼ tsp salt

  • ½ tsp light soy sauce

  • ¾ tsp dark soy sauce

  • 1½ tsp potato flour

  • 1½ tbsp water

Instructions

  • Cut the beef into thin slices. Mix together the marinade ingredients and add the 1½ tbsp water. Mix well with the meat

  • Cut the pepper into 1-2cm strips, then cut again diagonally it bitesize pieces

  • Add 3 tbsp of oil to your pan and heat over a high flame. Stir-fry the meat until the pieces have separated, but they are still a little pink. Remove from the pan

  • Add the remaining oil to the pan and stir-fry the ginger and garlic until fragrant. Add the peppers and chilies if using, and stir-fry until everything is cooked and smells delicious.

  • Add in the beef slices, stir, then add the cumin and dried chillies.

  • Stir-fry until everything is sizzling nicely, then add the spring onion and toss. Remove from the heat, stir in the sesame oil, then serve

So on Friday I was discussing the upcoming leap day with my coworkers and decided we needed a tradition for this uncommon day. After much brainstorming we settled on cookies, with lofty goal of making 29-ingredient cookies (in celebration of the day). The problem is any search for "most ingredients in a cookie recipe" or "many ingredient cookies" inevitably brings results for 2 and 3 ingredient oatmeal cookies. Yeuck.

So, r/recipes, what have you got for me? What's your best, high ingredient, overly sophisticated cookie recipe? I must impress my coworkers! And celebrate the once every four year holy of holy days!

Ingredients (for 10 portions)

1kg beetroot 1 lemon 1/2kg carrots 1kg oranges 1kg apples 300g honey cranberry juice optional - chia seeds

Grate all the raw fruits and vegetables and then puree them until smooth. Take 4 big spoons of mash, add a spoon of honey and about 300 ml of cranberry juice. Puree until you have a juice consistency. At this point you may want to add a tea spoon of chia seeds into your drink.

PS: you can keep this mixture in fridge for about 5 days, but normally its gone by that time :)

  • pill all other boiled ingredients and shred them.
  • cut or chop the onion.
  • take a dish where your salad is gonna be and make a layer with herring
  • then place a little bit of onion and cover all herring up with shredded potatoes.

  • Make a layer of eggs.

Broke university student looking for simple to cook meals that i can cook in bulk and eat throughout the week.

Hi guys, Im a university student who's looking for some simple recipes of meals that i can prepare and cook in bulk then put in tupperware and eat throughout the week.

I should add that I am a novice in the Kitchen (something im not proud of and as soon as i can afford to i will be taking cooking classes) however i do have an acceptable grip of the basics.

Perhaps I am asking too much in finding a recipe thats (a) cheap, (b) easy to prepare, and (c) able to be cooked in bulk/long lasting so I don't mind if getting the ingredients together is pricey as I will save money in the long run by cooking in bulk. I just want to eat more healthily as i'm tired of microwave meals and 2 minute noodles.

Jalapeno Cheese Dip!

Ingredients:

  • Jalapeño - 3
  • Clove of Garlic - 1
  • Cream cheese - 1 package (room temp)
  • Spinach - 1/4 cup cooked
  • Parmesan cheese - 1/4 cup grated
  • Cheddar cheese - 1/2 cup grated
  • Light Mayo - 2 TBSP
  • Corn Chips - 1 bag

Instructions: Preheat oven to 400 degrees Celsius.

Roughly chop the garlic and the jalapeños, I use one whole jalapeño and then seed the other 2. Depending on your tolerance for heat but I find one is perfect.

In a food processor, pulse the jalapeño and the garlic until you have a finely diced texture.

Chop the cooked spinach into small pieces. In a medium bowl, put the cream cheese, jalapeño and garlic mixture, spinach, parmesan and cheddar cheese, and mayo. Mix well and add to a oven safe bowl. Sprinkle extra parmesan cheese on top. Bake for 25 minutes until golden brown and bubbling. Serve with corn chips.

Vegetarian Lasagna with Homemade Eggplant Bechamel Sauce

Ingredients

  • ~ 20 lasagna sheets (ready to bake).
  • 1.5 kg (53 oz) frozen spinach.
  • 2 large leeks sliced.
  • 1 large onion chopped
  • A bunch of fresh dill chopped.
  • 3-4 large ripe tomatoes.
  • 500 ml (17 fl oz) tomato passata.
  • 2-3 garlic cloves.
  • A bunch of flat-leaf parsley.
  • A pinch of dried oregano.
  • 500 gr (17 oz) mushrooms sliced.
  • A handful of pine nuts.
  • 2 tablespoons of butter.
  • 2-3 tablespoons of all-purpose flour.
  • 1 lt (34 fl oz) whole milk.
  • 2 eggs.
  • 5 large eggplants.
  • 2 fresh mozzarella balls.
  • 400 gr (14 oz) shredded mozzarella.
  • 250 gr (9 oz) ricotta cheese.
  • ½ teaspoon of ground nutmeg.
  • ~ ½ cup of extra-virgin olive oil.
  • Salt and ground pepper.

Directions

  • Preheat the oven at 200 degrees Celsius (390 F) or even higher. Pierce the eggplants with a fork to create small holes to let the steam out. Lay them on a tray covered with greaseproof paper and cook them for ~ 1 hour until they start getting burnt on the outside. Remove from the oven and let them cool down.

  • Heat up 3-4 tablespoons of olive oil in a large frying pan (or pot preferably) on medium heat. Add the leek and onion and cook until softened. Drain the spinach well and add it to the pot. Stir well and let it cook for ~ 15 minutes while stirring occasionally. Season slightly with salt and pepper. Add the dill and cook for another 5 minutes. Turn the heat off and let it cool down. If you see any excess liquids, remove them with a spoon. When cold enough, add the ricotta cheese and stir well.

  • Open the eggplants and remove their flesh using a spoon. Cut it in small pieces and place them in a bowl.

  • Add 2-3 tablespoons of olive oil in a frying pan on medium heat. Add the mushrooms, season with salt and pepper and sauté them until golden brown. Remove from heat and set aside.

  • In a small pan on medium-high heat, toast the pine nuts for 2-3 minutes until golden brown. Set aside.

  • Add the tomatoes, garlic and parsley to a blender and make a smooth paste. Warm up 2-3 tablespoons of olive oil in a saucepan on medium heat. Add the fresh tomatoes, the passata, oregano, salt and pepper and cook for ~ 15 minutes while stirring from time to time until the sauce thickens.

  • Prepare the bechamel: Drain all the excess liquid from the eggplants. Add the butter in a saucepan and warm it up on low heat. When the butter has melted, add the flour and use a stainless steel whisker to combine them together. Stir aggressively to make a nice roux. While stirring, add the milk and the two whisked eggs. Keep stirring slowly until the sauce thickens. That may take ~ 10 minutes. Season with salt and pepper. When almost ready, add the eggplant, ~ 100 gr ( 3.5 oz) of shredded mozzarella and the nutmeg. It is important that the sauce never comes to boil. When the sauce is thick enough, turn the heat off and set aside.

Roasted Asparagus Hoagies

Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins

Ingredients

  • 1 pound asparagus, trimmed
  • 2 red bell peppers, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to tasted
  • ¼ cup mayo
  • 1 tablespoon lemon juice
  • ¼ cup crumbled feta
  • 4 whole wheat hoagie rolls
  • 4 ounces pepperjack cheese, sliced

Instructions

  1. Preheat oven to 425°F (220 C). Fit a baking sheet with a baking mat or spray with cooking spray. Place the aparagus, bell peppers, and onion on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in preheated oven for 10-12 minutes, or until the veggies are very tender. Remove from oven. Preheat broiler.
  2. While the veggies are roasting, stir together the mayo, lemon juice and feta, set aside.

  3. Place the bottom of the hoagie rolls on a baking sheet, and stack roasted veggies on top. Place pepperjack cheese on top, and then place under broiler until cheese is melted, about 2 minutes.

  4. Spread the mayo on the top of the hoagie buns, then place on sandwiches. Serve!

Ingredients

  • Cooking spray
  • 1 cup chopped broccoli
  • 2 large eggs, beaten
  • 2 tablespoons feta cheese, crumbled
  • 1/4 teaspoon dried dill
  • 2 slices rye bread, toasted

Preparation

  1. Heat a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli, and cook 3 minutes.

  2. Combine egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.

‘Five-Star’ White Sandwich Bread – Prepared in a Bread Maker

You’re gonna love this recipe! The loaf bakes up super high with a lovely, springy texture – great for sandwiches, toast and French Toast. Because it’s made in a bread maker, you just add the ingredients, press a button and, in a few hours, you’ll be making sandwiches with freshly baked bread.

I love reading reviews of recipes and it seems people have fallen in love with this recipe. In fact many reviewers said they made this bread two to three times a week. You can’t have a better recommendation than that! King Arthur Flour calls this “Bread Machine Bread – Easy as Can Be”, but I prefer the name “Five-Star Bread” because this recipe is so highly rated!

King Arthur Flour, based in Vermont (USA), has been in existence as a flour mill since 1790 – that’s a long, long time. I truly love their products. When we had our farm in Quebec we traveled back and forth between our ‘Yellow Farmhouse’ here in Massachusetts and our farmhouse ‘up north’ – and I loved to drop by King Arthur’s Flagship Store, aptly named The Baker’s Store, in Norwich, Vermont. If you’re ever in the New England area, I highly recommend dropping by!!

INGREDIENTS AND METHOD - LARGE LOAF (1 1/2 – 2 lb.)**

For directions for a Smaller (1 lb.) Loaf — continue scrolling down.

  • 1 cup lukewarm water

  • 1/3 cup lukewarm milk (Warm, briefly, in microwave.)

  • 3 Tbs. butter – slightly softened

  • 3 3/4 cups all-purpose or bread flour

  • 3 Tbs. sugar

  • 1 1/2 tsp. salt

  • 1 1/2 tsp. active dry yeast OR instant (bread machine) yeast I used bread machine yeast.

Follow your bread maker’s instructions for basic white bread. With my bread maker I set the machine to ‘Regular/Basic’, which takes 3 hours and 50 minutes. Enjoy !!

Southwest quinoa salad

INGREDIENTS

  • 1 cup uncooked quinoa

  • 2 cups stock

  • 1 can black beans, drained and rinsed

  • 1 red bell pepper, seeded and diced

  • ½ red onion, finely diced

  • 1 punnet cherry tomatoes, sliced in halves

  • 1 cup frozen corn

  • ⅓ cup olive oil

  • ⅓ cup cilantro

  • 1 lemon, juiced

  • ½ tsp cayenne peppers

  • 1 tsp cumin

  • ½ tsp salt

INSTRUCTIONS

  1. Cook the quinoa according to the instructions on the package.

  2. Prepare all the vegetables and beans and put them in a mixing bowl.

  3. Fry the corn in a pan over high heat until slightly charred.

  4. Add the corn and the quinoa to the vegetable mixture.

  5. Whisk the olive oil, lemon juice, cilantro and spices in a small bowl. Add the mixture to the vegetables, quinoa and corn and mix well.

  6. Divide the salad over bowls and serve immediately topped with cilantro. Alternatively store in fridge for up to 3 days in airtight container.

Curd pancakes are traditionally made by mixing cottage cheese, flour, eggs, and sugar and then frying on a pan. To reduce the amount of flour my mom used to add banana. This also made them a little bit sweeter and tastier. I sometimes substitute sugar for condensed milk or honey, or add vanilla extract in addition to sugar. You can also swap flour for semolina, but I prefer to use plain flour. There are many ways to make them interesting and tasty.

Here is the traditional recipe:

  • 250g of fine cottage cheese
  • 1 egg
  • 3 tbsp of sugar
  • 3 tbsp of flour
  • 3 tbsp of sunflower oil

Use food processor to chop the cottage cheese. Beat the egg with sugar and then add your fine cottage cheese. Mix well and add one table spoon of sunflower oil to make pancakes more tender. The rest of the oil is used for frying.

Add flour and sugar to the dough and mix everything together. Cut the small pieces, wrap in some flour and fry on both sides until golden crisp. Use medium heated pan.

cooking with apple pucker??

After having a few friends over I have found myself left with about 2 shots worth of Sour Apple Pucker and I don't really care for liquor. In the past I have used things like Peach Schnapps and Blackberry Brandy in cobbler recipes to amazing results. I'm curious if anyone has tried using sour apple pucker in baking recipes and if so how it turned out?

My current thought is to cook down some apples for a pie filling but to add the couple shots of apple pucker as it cooks.

Smashed Cucumber! Easy to make and great appetizer.

Ingredients: Japanese Cucumber: 12 oz

Dry Chili Pepper: 3~5

Vinegar: 1Tbs

Sugar: 1 Tsp

Salt: 1/2 Tsp

Instruction: Mix salt, sugar and vinegar. Then smashed cucumbers and cut them into inch long pieces. Then mix the seasonings with cucumber pieces. Cut try chili peppers in to half inch long pieces. Heat up a wok and put in 2 tbs oil and put in the cut up peppers. Flip until peppers turns black and pore the pepper oil on top of the cucumbers.

Herbed Roasted Veggie Salad

Ingredients

  • 1 lb. broccoli florets
  • 1 lb. carrots, cut into 1-inch wedges
  • 1/2 c. olive oil
  • 1 lb. Brussels sprouts, trimmed and halved
  • 3 medium shallots, sliced
  • 1 c. fresh cilantro, finely chopped
  • 1/2 c. fresh mint, finely chopped
  • 3 tbsp. fresh lemon juice

Directions

  1. Preheat oven to 450 degrees F. Toss broccoli, carrots, 1/4 cup oil and 1/4 teaspoon salt; arrange in single layer on large rimmed baking sheet and roast 10 minutes.
  2. Toss Brussels sprouts, shallots, remaining, 1/4 cup oil and 1/4 teaspoon salt. Arrange in single layer on another large rimmed baking sheet; add to oven with other vegetables.

This is a very easy chicken thighs recipe which is also very quick and tasty. tamarind leaves the chicken tangy and delicious while sugar and vinegar helps tenderize the thighs – as if they are not tender already. I love tamarind drink, it is sweet, tangy and so delicious and it reminds me so much of the holy month of Ramadan. This drink is also very common in Egypt during the summer days, when it is super hot and humid, this drink comes to cool you down and hydrate your poor summer body.

This was my only experience with tamarind, until one day, one of my friends here made grape leaves mahshi and she used a clever trick of drizzling it with tamarind while cooking instead of lime juice and it tasted so so good, it was little darker than the usual one made with juist lime juice but it was much tastier.

Since then, I have been thinking of using tamarind in marinating chicken and beef but did not quite go for it. Until I just managed to figure out a nice combination of ingredients that really worked very well with chicken thighs. Feel free to use chicken breast instead but really, I believe chicken thighs are much better in this recipe.

We loved this dish and I am going to make it over and over again, not just because me and the hubby licked almost every drop of sauce but also because my youngest – who barely eats chicken- got crazy about this recipe and kept asking for more!!

Tamarind chicken Ingredients

2 lbs boneless, skinless chicken thighs- cut into 1-2 inch pieces 3 tablespoon olive oil 2 teaspoon minced garlic 1/3 cup tamarind juice ( 2 teaspoon tamarind paste + water) 2 tablespoon brown sugar 1 tablespoon ketchup 1 tablespoon white vinegar 1/3 cup soy sauce 1 tablespoon cornstarch dissolved in 1/4 cup of water 

Instructions

Heat up a large skillet over medium high heat. then pour in the olive oil. Add the chicken pieces and cook for about 10- 15 minutes, stirring occasionally. In a bowl combine garlic, soy sauce, brown sugar, tamarind, vinegar and ketchup , mix everything well together. When all the water has evaporated from the chicken and it is nice and a little brown , pour the sauce into the pan. Stir it around to cover all the chicken pieces. When it boils, reduce the heat, and add the cornstarch dissolved in water, cover and let it cook for almost 20 minutes until done. Garnish with some sesame seeds and serve hot with rice/pasta or noodles Enjoy.

Sweet potato salad

INGREDIENTS

2 large sweet potatoes, cut into bite size pieces

5 tbsp olive oil

1 400g / 14oz can black beans

½ red onion

¼ cup red wine vinegar

1 small red bell pepper, chopped into medium sized chunks

1 tsp cumin

½ tsp salt

½ tsp black pepper

1-5 bird's eye chilli's, depending on how well you handle spice

4 spring onions, chopped finely

½ avocado, cut into small chunks

INSTRUCTIONS

Put the sweet potato in a baking dish, toss with 1 tbsp of olive oil and season with salt and chilli powder. Bake in the oven at 200C/390F for 20 minutes, turn the sweet potato and bake for another 10 minutes. Set aside to cool slightly.

In a food processor combine 4 tbsp olive oil, red bell pepper, red wine vinegar, cumin, salt, black pepper and the chilli's until smooth.

In a large mixing bowl combine the roasted sweet potato, black beans, red onion and the dressing.

Garnish with the spring onion and avocado and serve hot or cold.

Matcha Coconut Latte Recipe

Really great tasting latte that uses coconut and Matcha green tea. It's a super healthy form of latte packed with a huge amount of antioxidants and vitamins. With warm coconut milk and a spoon on honey it has to be one of most delicious lattes I've had.

Makes 1 cup

Ingredients:

1/2 - 1 tsp of Premium Matcha

1/4 cup of hot water

1/4 cup of warm coconut milk

1 tsp of natural honey or sweetener of your choice (optional)

Instructions:

Step 1.

Take 1/2 tsp (or a full one if you like it strong) and put it into a mug or your choice.

Step 2.

Add a 1/4 cup of hot water to the powder and mix well. Use an electrical frother or Matcha whisk for best results.

Step 3.

Add the 1/4 cup of warm coconut milk and honey / sweetener (if you're using it) to the mug. Stir again until the honey is dissolved and you have a thin layer of froth on top.

Step 4.

Sit back and enjoy.

Tips:

For an even smoother latte, sift the Matcha beforehand. This helps eliminate any small lumps and therefore creates an even more balanced flavour.

If you like your latte slightly richer use full fat coconut milk, otherwise use light - it certainly works for us.

Eggplant Pizzas

Ingredients

  • Canola oil spray
  • 1 large eggplant, sliced into 1-inch rounds
  • 1/4 teaspoon sea salt
  • 1/2 cup low-sodium tomato sauce
  • 1 cup low-fat mozzarella shreds
  • 10 grape tomatoes, sliced
  • 1 tablespoon diced red onion
  • Fresh basil, to garnish
  • Red pepper flakes, to garnish

Directions

  1. Preheat the oven to 400ºF(200 C).
  2. Lightly spray two baking sheets with canola oil spray, lay out the sliced eggplant, and sprinkle with the sea salt. Bake for 20 minutes.
  3. Remove the eggplant trays from the oven, and construct your minipizzas. Spread out a heaping tablespoon of tomato sauce..

First Shot at Sous Vide Fried Chicken was the best I've ever made

Sous Vide Fried Chicken is simply the best fried chicken I've ever made or tasted. Moist, tender, perfectly browned.

Recipe:

Ingredients

  • 8 cups water

  • 3/4 cup kosher salt

  • 3/4 cup sugar

  • 1 Tbsp. garlic powder

  • 1 Tbsp. onion powder

  • 1 whole chicken, broken down into individual pieces

  • 1 quart buttermilk

  • 1 1/2 cups flour

  • 1/4 cup cornstarch

  • 2 tsp. baking powder

  • 1 Tbsp. sea salt

  • 1 tsp. cayenne (more to taste)

  • 1 Tbsp. paprika (more to taste)

  • Peanut or canola oil, for frying

Directions

Boil water and stir in salt, sugar, garlic powder and onion powder. When sugar has fully dissolved, remove from heat and allow to cool to room temperature.

Place chicken pieces in a glass or plastic container, cover with chilled brine and tightly cover the container. Refrigerate overnight.

Remove brined chicken and pat dry with paper towels. Vacuum seal the chicken or place chicken in zip lock bags and remove the air from the bags. Cook sous vide using immersion circulator or similar at 65C/150F for two hours.

Once the chicken is cooked, remove from plastic and allow to cool to room temperature.

Return the chicken to a clean plastic or glass container and cover with buttermilk. Marinate for 30 minutes or more.

Mix together the flour, cornstarch,baking powder, sea salt, cayenne and paprika and put the mixture on a large rimmed plate or rimmed baking sheet.

Heat about 1/2 inch of oil in a large cast iron pan or a dutch oven. When the oil is at least 375F, remove chicken pieces one at a time from the buttermilk, shake off excess, roll in the flour mixture to coat well and add to the hot oil. Fry in batches, if necessary. (Note: If you like a thick crust, dip the chicken pieces back in the buttermilk and flour a second time before frying.)

Fry the chicken until the breading is a golden brown (remember, the chicken is already fully cooked) and place each piece on a rack over a cookie sheet to drain.

Brown Butter Ramen w/ Berries & Almonds

This recipe is what happens when I'm left alone with too much time to kill. It's a semi-sweet, "almost dessert" instant ramen. I'm curious to know if any one else on here has had or made any sweet ramen dishes.

Brown Butter Ramen with Almonds & Berries

Ingredients

  • 1 Package of Instant Ramen
  • 3 Tablespoons of unsalted butter
  • 1 Tablespoon of Honey
  • Pinch of Salt
  • 2 Tablespoons Slivered Almonds
  • 1/4 Cup Dried Berries
  • Cinnamon

Instructions

  1. Toast the almonds over medium heat in a small frying pan until golden in color. It should take about five minutes, but your nose will also let you know when they’re done (it’ll smell like roasted nuts).

  2. Brown the butter. I like to start with a pan on low and gradually increase the heat to medium, while stirring constantly. First, the butter will start to foam as the water evaporates, then you'll start to see the color change and it emit a nice nutty flavor. Once it had a nice golden color, IMMEDIATELY take it off the heat and pour into a bowl. The difference between brown butter and burned butter is only a few seconds.

  3. Prepare the ramen noodles per the instructions on the package (don’t use the flavor packets).

  4. Drain the noodles and place back into the pan you used to boil them. While still hot, pour in the butter, pinch of salt, honey, and berries. Toss until well mixed, then place in a shallow bowl. Top with almonds and a light dusting of cinnamon.

[REQUEST] Southern Thai Spicy Ground Pork and Chicken Curcuma Dish

Hi all,

I recently had the pleasure of eating a bright yellow dish that contained both pork and chicken, and quite a large amount of pepper. It may have been my single favorite dish of my entire trip to Thailand. I tried getting the name from the cook. She said it was 'kha min', but this gives no useful results on Google (apart from this being the Thai word for curcuma). All I know was that it was from Southern Thailand, and that it was absolutely delicious.

Does anyone here have an idea what this dish could have been, and how I can make it myself?

BBQ Cheesy Broccoli Pasta With Meat

WHAT YOU'LL NEED: 3 cups water 1 cup milk 2 tablespoons butter 1 tsp parsley 1 tsp black pepper A dash of salt A dash of chili powder 1 bag of Hormel seasoned taco meat (can also use chicken.) 1 red onion 2 bags Knorr Cheddar Broccoli pasta 1 bottle Kraft Hickory Smoked BBQ sauce

Add a small amount of butter to pan and set aside to melt gradually on low heat. Chop red onion into cubes, add to pan. Stir. Add parsley, pepper, salt, and chili powder to onion/butter mixture. Stir again, increase heat to medium, add more butter. Allow onions to soak up flavorings of spices for a few seconds before adding milk and water. Stir once more. Set aside. Pour bag of taco meat into microwavable bowl, smother with BBQ sauce. Stir until meat is mostly evenly coated. Nuke for about a minute, 15 seconds. Add to pan, stir. Reduce heat to low and let simmer until done, stirring occasionally. Top with sauce if desired.

Ingredients: 3 eggs ¼ cup brown sugar ½ cup buttermilk ½ cup water ¼ cup brewed decaf coffee 2 ½ cups all-purpose flour (measured after being sifted) ½ teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cloves 1 tablespoon cinnamon 1 tablespoon ginger 1 tablespoon nutmeg 4 tablespoons (1/2 stick) unsalted butter, melted

Step 1: Cream (beat together until your mixture is light, fluffy and has a uniform texture) together eggs and sugar.

Step 2: Stir the buttermilk, water, and coffee into the egg/sugar mixture and set aside.

Step 3: In a separate bowl sift together remaining dry ingredients.

Step 4: Add egg mixture to the dry ingredients and stir together.

Step 5: Mix melted butter into the batter.

Batter should be thick, but add more water or buttermilk if it is too thick.

Cook pancakes until done on a lightly greased hot griddle or in a heavy skillet – turning once when bubbles appear on face up side and start to break. Pancakes will be thick and cake-like in texture.

Makes 8 to 10 full size five pancakes or about 20-25 small pancakes.

What was that best beans recipe of Reddit's history?

A few years ago, a Mexican user commented on a thread about his family's best black beans recipe. He cursed a lot, it had a ton of ingredients (cumin, white vinegar). I remember one phrase that said something like "some people rinse their beans. Don't do that. Throw the whole fucking can in the pot." I can't remember anything else about it, except that it was delicious!
