[REQUEST] Homemade mac and cheese - but not as rich

I'm looking for something more similar to the boxed variety. I've tried a few recipes in the past (can't recall which ones, probably on allrecipes) and they asked for sharp cheddar and another cheese, which I did. Too rich/sharp. So I switched to mild cheddar. Still too rich. Added less cheese, still pretty rich!

I haven't attempted any in a long time due to past mac and cheese too-rich-for-us trauma. I've had homemade mac from restaurants and it's always perfect!

Any recipes to share?
