These tasty delicious brownies

Ingredients

  • 200g unsalted butter (1/3 pounds plus 2 ounces)
  • 200g organic dark chocolate (1/3 pounds plus 2 ounces)
  • 90g plain flour (1/2 C and 3 tbsp, all-purpose)
  • 45g organic raw cocoa powder (5 tbsp)
  • 50g milk chocolate (2 oz)
  • 50g white chocolate (2 oz)
  • 300g organic brown sugar (1 ¼ C)
  • 3 large organic eggs

Directions

Step 1.

  • Take 200g of unsalted butter and cut it into tiny cubes, then put it into a bowl.
  • Take 200g of the “best you can find” organic dark chocolate and break it into tiny pieces and put bowl.
  • Put the bowl over simmering water. Melt slowly, do not overheat!
  • Leave to cool down in normal room temperature.

Step 2.

  • Preheat the oven to 160C / 325F (normal), 180C / 355F (gas), fan option. Use shelf in middle section.
  • Cut and use non-stick baking sheet and put it onto a shallow square tin (about 15-20 cm). Could use foil as base.
  • Take about 90 grams of flour and cocoa powder and gently sieve it over a bowl, try to remove any lumps.

Step 3.

  • Take the white and milk chocolate, about 50g each and cut them into cubes. Continue until tiny squares. Tip: Use a very sharp knife.
  • Take 3 large eggs and about 300g of organic brown sugar and mix into a bowl.
  • Use a mixer, this may take 4-8 minutes, and turn it into a pale cream-like mixture. Look for the trail on the surface.
  • Pour the room temperature chocolate mixture over the eggy mousse you just created.
  • Use a rubber spatula to fold. Be gentle, do not remove the air. When dark brownish you are done.

Step 4.

  • Hold the sieve over the mixture and resift the flour and cocoa mixture. Try to cover the top evenly, gently fold until dry and dusty. Continue until fudgy. Be patient, this may take some time but do not over do it!
  • Stir in the chocolate mix until they are dotted through out. alt

Step 5.

  • Take the already prepared tin and pour the mixture slowly using the spatula. Make sure it cover the corners, use gentle hands during this process.
  • Put it into the preheated oven for about 30-40 minutes. Before you take it our try to gently shake/wobble the shelf a bit, if it moves in the middle leave for a few minutes more.
  • Leave to cool down, cut in preferred sizes and serve.
