Fig, Pomegranate and Coconut Oatmeal

Fig, Pomegranate and Coconut are such an ingenious combination. Not trying to sell my own oatmeal here but I’ve only just tried it and I will definitely be mixing them together again! So oatmeal, or ‘grød’ is a huge thing in Denmark. There’s a famous takeaway place in the centre of Copenhagen called Grød that I am dying to try the next time I go to Denmark, the flavours they use are so inventive (I’m planning on taking a bit of inspiration for future breakfasts too..) So this is the simplest breakfast because it’s really just a bowl of oatmeal – but let’s be honest you can really make it or break it (speaking from a rock-solid bowl of oats experience). It’s full of lovely vitamins and natural sugar to start your day off right, no need for anything artificial! Oats are perfect for breakfasts because they release energy slowly throughout the day so you’re not hungry and hour after you eat.

INGREDIENTS

  • 150 ML OATS (ABOUT 1/2 A CUP)
  • 300 ML WATER
  • 5 TBSP POMEGRANATE SEEDS
  • 1 TSP VANILLA PASTE
  • 1 TSP CINNAMON
  • PINCH OF SALT

  • 10-12 ALMONDS

  • 5 BABY FIGS (OR 2 LARGE FIGS)

  • 2 TBSP UNSWEETENED COCONUT SHAVINGS

I know some of you will be questioning the vanilla, but trust me it makes the oatmeal taste perfect! It adds a little extra sweetness the oats need while cooking.

Firstly, take out the pomegranate seeds as this definitely takes the longest. Watch your clothes while you do this, as the seeds stain. So, get all the lovely seeds out in preparation. Now cut up the figs into thin slices.

Just measure out the oats and the water, pop them in a pan and cook them over medium heat. When the oats and water have started to bind, add the cinnamon and vanilla paste. When it’s almost fully cooked then add the pomegranate seeds.

After that it’s up to you! I made my figs into a little flower patter and scattered the almonds and coconut shaving all around. Let your artistic soul break free on your oatmeal.
