Ingredients
- Canola oil spray
- 1 large eggplant, sliced into 1-inch rounds
- 1/4 teaspoon sea salt
- 1/2 cup low-sodium tomato sauce
- 1 cup low-fat mozzarella shreds
- 10 grape tomatoes, sliced
- 1 tablespoon diced red onion
- Fresh basil, to garnish
- Red pepper flakes, to garnish
Directions
- Preheat the oven to 400ºF(200 C).
- Lightly spray two baking sheets with canola oil spray, lay out the sliced eggplant, and sprinkle with the sea salt. Bake for 20 minutes.
