Japanese Cucumber salad (Sunomono)

INGREDIENTS

1 cucumber 2 teaspoons of light soy sauce 1 tablespoon of sugar 2 tablesppons of rice vinagar 1 teaspoon of sesame seeds 1 teespoon of salt

RECIPE

  1. Slice up the cucumber into thin slices
  2. Put the cucumber in a bowl and sprinkle the salt over it, give it a good mix
  3. Let it rest for about 5 minutes
  4. Mix the sugar with the rice vinagar and the soy sauce in a separate cup
  5. After 5 minutes drain the juice from te cucumber
  6. Add the sugar mixture to the cucumber
  7. Mix well
  8. Add the sesame seeds
  9. Serve it up
