Artichoke and Olive Spaghetti

Yesterday i decided to make a different type of spaghetti which was Artichoke & Olive Spaghetti. Fortunately i had all the required ingredients to make it. Spaghetti is loved by most of the people and is an Italian cuisine.

So Lets Start

Serves : 4 people

Ingredients :

2 tbsp olive oil 1 large red onion 2 chopped garlic cloves 1 tbsp crushed lemon juice 4 baby eggplants quartered 20 fl oz/625 ml 1/2 1/2 cups strained tomatoes salt and pepper 2 tsp superfine sugar 2 tbsp tomato paste 14 oz/400 grams canned artichoke hearts 4 1/2 oz/125 g/2/3 cup drained and halved pitted black olives 12 oz/350 grams whole wheat dried spaghetti fresh basil sprigs garnished olive bread

Instructions :

1) Heat 1 tablespoon of the oil in a large skillet and gently cook the onion, garlic. lemon Juice, and eggplants for 4-5 minutes. or until lightly browned. 2) Pour in the strained tomatoes. season with salt and pepper, and add the sugar and tomato paste. Bring to a boil. reduce the heat, and let simmer for 20 minutes. Gently stir in the artichoke halves and olives. and cook for 5 minutes. 3) Meanwhile, bring a large, heavy-bottom pan of lightly salted water to a boil. Add the spaghetti, return to a boil, and cook for 8-10 minutes, or until just tender, but still firm to the bite. Drain well, toss in the remaining olive oil, and season with salt and pepper. 4) Transfer the spaghetti to a warmed serving bowl and top with the vegetable sauce. Garnish with the basil sprigs and serve with olive bread.

The end result was a delicious spaghetti, everyone's favourite :)
