1 1 1/2 Lb Pork Roast
1 LB Black Beans, washed
1 small onion or 1/2 cub dried onion
1 garlic clove, slices
Salt and pepper to taste
1 each red, yellow and green bell pepper, cut into 1 inch pieces
2 tablespoons olive oil
Tabasco or Franks Hot Sauce (optional)
Cooking Instructions:
Heat up pressure cooker and place the garlic, onion, salt and pepper first. Stir well, and add pork roast. Turn roast over so as to brown the sides. Add dry beans and 6 cups of water and the olive oil. Seal pressure cooker and let cook under steam for 40 minutes.
Once the 40 minutes are up, release the steam carefully, and keep the heat up, so that the beas will simmer. Add chopped bell peppers and stir freaquently to keep beans from burning. Let simmer for an hour or untill the stew has a thick consistancy. Add salt and pepper to taste and hot sauce, if wanted. Using wooden spoons, shred the pork into the stew, and enjoy over rice or in a warm tortilla!
