I hope you try this biscuit recipe, its simple and makes great biscuits, but "strictly" follow the recipe for best results. Makes 7 biscuits.
Preheat oven to 350
Ingredients: (2) cups of White Lily All purpose flour (1) Tablespoon of Clabber Girl Baking Powder (1/4) teaspoon of Baking Soda (1/4) teaspoon of salt) (6) Tablespoons of (very cold) Butter (1) Cup plus (1) or (2) tablespoons of Buttermilk * DO NOT USE LOWFAT
Begin by very carefully measuring the flour into the cup, do this by adding the flour one spoon at a time to the cup and then leveling off with a straight edge (knife)
Sift the flour, the baking powder and baking soda and add the salt. Now cut the butter into very small cubes & cut in the cold butter or if you prefer shred the butter using a cheese grater. Keep your hand cold and try not to touch the butter.
Once this is done, slowly stir in the buttermilk until the dough pulls away from the sides of the bowl.
Please the dough on a lightly floured surface and fold over onto itself a few times. BE VERY VERY GENTLE. Now (gently) flatten out the dough to 3/4" and using a 2.5" biscuit cutter - cut the biscuits straight down without turning. Place the biscuits on a greased pan and bake at 350 for about 20 minutes or until lightly browned.
Serve with butter, jelly and honey.
Variation - you can add a cold pre-baked sweet potato to the dough before adding the buttermilk and have sweet potato biscuits.
