White Beans over White Rice

Try this simple authentic Cajun recipe from a simple authentic Cajun. White Beans over white rice Ingredients: - (~1/2) cup of cooking oil (divided) (cover the bottom of your pot) - (1) pound dry Great white Northern beans - (1) Onion (chopped) - (4) Cloves of fresh Garlic (chopped fine) - (1/4) cup of chopped fresh parsley - (1/4) cup of chopped fresh green onion tops (aka shallots in S.La) - (1) pound of salt pork shoulder (saltmeat) (rinsed in water) - Salt and pepper to taste

Place beans on medium / high heat in enough cold water enough to cover the top, add 1/4 cup of cooking oil to the water and let come to a boil then simmer until the outer shell of the beans start to separate. Note: DO NOT add seasoning -- yet

In a separate pot place the salt meat in a pot of water and put to boil - continue to watch the water level. Boil the salt meat until you can easily cut it with a table spoon. about (90) min.

After the beans have boiled and the shells have separated, drain the water out and set the beans aside in a colander.

Now rinse and dry the pot you boiled the beans in originally and put back on the stove at med heat. Add the remaining 1/4 cup of cooking oil and the chopped onions. Let the onions lightly brown and add the chopped garlic. Allow the garlic to lightly brown (be careful not to burn) and add water to stop the cooking. Now add the beans that were set aside and add enough water to cover them by 1 " or do bring to a medium boil until the beans are very soft (approx 90 min) continuing to stir especially the bottom as they can stick and scorch. You can mash the beans on the side of the pot using a big spoon to thicken the gravy.

Once the beans are completely done, and not before, turn off the fire and add salt and black pepper to taste and throw in the shallots and fresh parsley (please do not use dry parsley flakes)

Now cut the salt meat into small 1.5" squares and add to the beans.

Serve over white rice with fried fish, fried pork chops, pork roast, beef roast, round steak and fresh bread.
