- 1 cup rice flour
- 1 2/3 cups almond flour
- 1/2 cup icing sugar
- Zest of one medium orange (about 2 tablespoons)
- 2/3 cup butter, softened
- 8 ounces semi-sweet chocolate
- Preheat oven to 350˚F (175˚C). Line a baking sheet with parchment paper.
- Sift the rice flour, almond flour and icing sugar together in a medium bowl. Stir in the orange zest. Cut in the butter until the mixture is smooth and holds together.
- Form the dough into 2-inch balls. Place the balls onto the prepared baking sheet a few inches apart and flatten with the palm of your hand. Bake for 14 minutes. Remove from oven and allow to cool for 5 to 10 minutes before transferring to a wire rack to finish cooling completely.
- Break the semi-sweet chocolate up into small pieces and place into a deep and narrow bowl. In a microwave, melt the semi-sweet chocolate for about 90 seconds. Stir the chocolate to make it smooth and completely melted. Dip the cooled cookies halfway into the chocolate, then place them on a piece of waxed paper to set. After an hour they’ll be ready to packed up and taken to the party.
