So I probably have more like 1.5 lbs pinto beans because I crockpot cooked a 2 lb package and used some for rice bowls (lots of fresh veggies and hummus sauce). The left overs have been in my fridge for about a week and I don't know what to do with them. If there is an easy way to freeze them or preserve them another way then I am all ears. Of course, I want your recipe ideas, too! My brain gets stuck at Mexican food ideas.
